  • They can be quite large or full size, which is much larger than chicken wings but not as much as the giant wing (the only one) I use to make broth and fricassee, enough for four people.
  • For this recipe, I'm using large specimens that weigh around 1.3 oz/600g each, so they're still pretty big.
  • Three wings with a total weight of around 2 kg was enough to feed 4 adults with leftovers.
  • Turkey wings aren't always available, you can ask your local butcher ahead of time if you'd like to make them.

BBQ Spice Powder:

  • I usually use lemon pepper (if you have it).
  • Otherwise, use your favorite homemade or store-bought dry dough. Regular poultry seasoning, something spicy like Cajun seasoning, whatever you like.
  • Or make a dry rub by mixing together garlic powder and onion powder, sweet (or hot) paprika, salt and pepper. You can even add a bit of brown sugar if you want to make the dish sweeter. Or a little chili powder, red pepper flakes, or cayenne pepper for a spicier dish.
  • And if you don't want to use spices, just salt and pepper, the dish will still be delicious.

Other Ingredients:Olive oil, a little turkey or chicken broth. You probably won't be able to buy turkey broth, so chicken broth or chicken broth will work just fine, unless you've already made your own turkey broth beforehand.

How are turkey wings baked?

What to do with leftover bones?

Never pull; They make the most wonderful broth. If I don't have enough at once or don't have time to cook the broth right away, I freeze it until I have enough.
