Bursting with flavor, these delicious Smoked Salmon Canapés are easy to prepare and are sure to be a hit with your guests. Plus, they're low carb and gluten free!
The New Years may be over, but I still have a stash of fancy hors d'oeuvres and great snack recipes that have yet to be posted across my 3 blogs. oops!
Today's recipe is my low-carb, gluten-free version of an easy French appetizer: Cream Cheese Bites.
Canapés are a simple appetizer: small bites consisting of a bread or dough base, usually a slice of bread, rye bread triangles, mini toast and/or melba toast, topped with...something.
Cheese, meat, a spread, a fancy piece of veggies or herbs, a combination of all of that…they can all be pretty free.
You really only have to be a small bite.
You'll usually see them on special occasions, often as canapés at a cocktail party or served hours before a dinner party, or even before a special Christmas dinner or Sunday brunch. (like Easter).
I have always loved smoked salmon canapés: the combination of cream cheese and salmon gives it a perfect bite with great contrasts of texture and flavor.

Instead of using a bread base, I use cucumber slices.
Filled with a delicious blend of cream cheese and some smoked salmon, it's not just an easy appetizer, it's the perfect appetizer to deal with gluten allergies and the need for low-carb alternatives.
I love when a recipe is delicious for everyone while also addressing one person's dietary needs, and keto snacks are a great way to achieve that!
This can be ridiculously easy to make, but serve it with a nice white wine, or sparkling wine, and it looks a lot fancier than it should!

Ingredients
This recipe uses just a few simple ingredients that should be easy to find in most grocery stores. Some tips for you:
smoked salmon
While hot smoked salmon - like mineHot smoked sockeye salmon recipeIt's fantastic, you should use cold smoked salmon fillets for this.
Hot smoked salmon is cooked salmon with the expected flaky texture. It could definitely be tasty on a canapé, but not quite as fancy.
Cold-smoked salmon is cured rather than cooked. This gives it a completely different texture: silky and smooth instead of flaky.
You can usually find good quality smoked salmon in cardboard boxes or fancy boxes in the fish section of larger supermarkets.
cream cheese
I like to use a full-fat, plain cream cheese, softened at room temperature for easy blending and drizzling.
While crème fraîche is popular for salmon appetizers, it's not really firm and doesn't hold its shape when drizzled.
Other than Neufchatel (usually high carb), I really don't think there's a good substitute for cream cheese in this recipe.
fresh herbs
I use fresh dill and fresh chives in the flavored cream cheese and sometimes an extra sprig of fresh dill for garnish.
If I have to replace it with dry, I would put in half of that and freeze the curd before using it so the flavor comes out better.

To complete the recipe you will need:
english cucumbers
fresh garlic cloves
Lemon peel
salt and black pepper
Optionally, consider a few slices of lemon, capers, or dill for garnish.
How to make smoked salmon bites
For the full recipe, check out the recipe card at the end of this post, here is the illustrated step-by-step guide.
Use a sharp knife to slice the cucumbers; I like to aim for a thickness of about ¼ inch, slightly on the diagonal.
Pat slices dry with a paper towel to remove excess moisture (this will keep the cheese from slipping!), set aside.
Prepare the ingredients to your liking: squeeze the garlic, grate the lemon, chop the dill and green onions, etc.
In a small bowl, beat softened cream cheese until smooth.
Add the dill, chives, garlic, and lemon zest to the cream cheese.
Stir well to combine the cream cheese with the added ingredients, then season with salt and pepper.
When adding the cream cheese to the canapés, place it in a piping bag. I like to use one that comes with a coupler and star tip.
Spread or spoon cream cheese mixture over cucumber slices while placing on serving platter.
Divide the smoked salmon into slices, cut into long salmon slices.
Place a piece of salmon on top of the cucumber slices covered with cream cheese.
Garnish with capers and/or a small sprig of fresh dill and serve immediately.
Note: You can make the cream cheese mixture ahead of time and store it in an airtight container in the refrigerator.
Just keep in mind that cream cheese is much easier to work with at room temperature, or even warmer, so be sure to warm it up a bit before removing.

- sixteen ounces cream cheese room temperature
- ¼ Taxes freshly seasoned hacked
- 2 soup spoon fresh chives very finely chopped
- 2 Garlic cloves pressed or finely chopped
- Zest of 1 lemon
- salt and pepper
- 2 smoked salmon packets ~11-12 ounces total
- capers Optional
- extra dill to decorate
